
Ingredients:
- 250 g butter
- 150 g sugar
- 2 eggyolk
- 200 g plain flour, sifted
- 30 g dried cranberries
- pinch of salt
- 200 g pumpkin seed grounded
- 50 g sunflower seed grounded
- 2 tablespoon chia seed
- 1 vanillastick scraped

This is a full-protein cookie that makes the perfect portable snack any time of day.
Preheat the oven to 190 C. Line 2 baking trays with non-stick baking paper.
Place the flour, the seeds, salt, sugar, vanilla seeds and cranberries in large bowl and stir until well combined. Add the butter, the eggyolk and mix thoroughly with your hands.

Take small pieces and roll into walnut-sized balls with your hands. Place, about 5 cm apart, on the lined trays.
Pop into the oven for 10 to 15 minutes or until golden.
