Lemon curd

Lemon curd recipe

Ingredients:

  • 150 ml lemonjuice
  • 120 g unrefined caster sugar?
  • 100 g unsalted butter
  • 4 eggs

Lemon curd is a super rich spread or dessert topping. It’s buttery with intense sweet-tart lemon flavor.

Like jam, but much creamier. You may spread it onto scones or you can stuff it in crepes, spongcake, or just swirl it into yogurt...only the imagination sets the boundaries.

Put the lemon juice, the sugar and the eggs into a heatproof bowl.

Sit the bowl over a pan with gently simmering water, making sure the water is not get in touch with the bottom of the bowl.

Stir the mixture countinuously until the mixture is creamy and thick enough to coat the back of a spoon. Set aside to cool, and add the butter cutted into cubes. Stirring as it cools.

After cooled, pour the curd into sterilised jars and seal.

Keep in the fridge until ready to use (expires approx. 7-10 days).
